Chicken Fajitas

Chicken fajitas are a popular Tex-Mex dish that consists of seasoned chicken, onions, and bell peppers, served in a warm tortilla with toppings like cheese, guacamole, and salsa. Here’s a recipe for making Chicken Fajitas at home:

Ingredients:

  • 4 boneless, skinless chicken breasts, sliced into thin strips
  • 2 bell peppers, sliced into thin strips
  • 1 onion, sliced into thin strips
  • 2 tbsp vegetable oil
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Flour tortillas, warmed, for serving
  • Toppings, such as shredded cheese, guacamole, salsa, and sour cream, as desired

Instructions:

  1. In a small bowl, mix together the chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken and cook for 5-7 minutes, stirring occasionally, until browned on all sides and cooked through.
  3. Add the sliced bell peppers and onion to the skillet with the chicken. Sprinkle the spice mixture over the chicken and vegetables, and stir to combine.
  4. Cook for an additional 5-7 minutes, until the vegetables are softened and the chicken is well-coated with the spices.
  5. Serve the chicken fajita mixture in warm flour tortillas, along with your favorite toppings.

Nutrition:

Chicken fajitas can be a relatively healthy meal, especially if you use a lean cut of chicken and plenty of vegetables. One serving (2 fajitas) of this recipe contains approximately 500-550 calories, 20-25 grams of fat, 40-45 grams of carbohydrates, and 35-40 grams of protein, depending on the size of the tortillas and the toppings used. To make it healthier, you can use whole wheat tortillas, and add more vegetables such as zucchini or mushrooms to increase the fiber and nutrient content of the dish. You can also use a smaller amount of cheese and sour cream or choose low-fat options to reduce the calorie and fat content. Finally, you can skip the tortillas altogether and serve the chicken fajita mixture over a bed of lettuce or brown rice to make it a more balanced and nutritious meal.
